Since then that IS the way I dry herbs. It's fantastic. The herbs are beautifully crisp and keep their bold colors. I don't know how long, technically, it takes to
dry stuff because I just wrap it up and toss it in the back of the fridge or into the butter compartment in the door and forget about it. Then I eventually unwrap and put in jars and into the spice drawer.

Lately I've been grabbing paper towels to dry the herbs with. With the paper towels you can only do one layer at a time though. With the tulle you can just keep rolling over thin layer by thin layer because air can easily circulate through the netting. In a pinch though, a paper towel will do just fine - like if you're just trimming an herb in your window sill and only have a small amount to dry. Try it ~ you'll like it!
